Duties and responsibilities

18 Manage the overall food production on the Danish Bakery kitchen
19 Plan, organize, direct and manage all activities within the food preparation areas of Danish Bakery
20 Maintain high quality and control system in the kitchen
21 Provide functional assistance and direction to the kitchen operation as assigned
22 Supervise the functioning of all kitchen employees, facilities and costs, and ensure profit is achieved
23 Control and analyze on an on-going basis the following
o Quality levels of production and presentation including staff meals
o Guest satisfaction
o Merchandising and marketing
o Operating, payroll, and food costs
o Cleanliness, sanitation, and hygiene
24 Prepare menus and participate in pricing policy in coordination with the Operations Manager by taking into the consideration the following
o Local requirements
o Market needs
o Competition
o Trends
o Recipes
o Potential costs
o Availability of Food and Beverage products on the local market
o Merchandising and promotion
25 Supervise the level of staffing and rosters so that overtime is kept to a minimum
26 Ensure that correct workplace health and safety regulations are maintained
27 Ensure that correct ordering and receiving procedures are followed
28 Keep track of all incidents that may occur in the food production area
29 Check all food preparation to determine the type and quality of items to be prepared
30 Ensure that all employees handle and use kitchen utensils and equipment properly
31 Create new recipes and recommend menu ideas to the Operations Manager
32 Control cooking procedures, portioning, garnishing and presentation of all dishes
33 Get involved on other tasks and cooperate in special projects when required
34 Liaise with purchasing department to ensure prompt and efficient purchasing, issuing of supplies, stock control and inventory control
35 Liaise with the Floor Manager and Catering Manager to ensure a constantly good standard of food quality, efficient profitability and creative presentation
36 Make recommendations to management for modernization of equipment, production methods, presentation and improved guest satisfaction
37 Coordinate functions and activities with other head of departments
